Tomato & Thai Basil Soup

No matter the weather, I still love a good bowl of soup for lunch! This one is optimised for sunny days though as it’s fresh, vibrant & light πŸ…

Also, thai basil over normal basil makes all the difference!

Ingredients:

  • 2 tins of plum tomatoes
  • 1 onion
  • 2 garlic cloves
  • handful of thai basil
  • 1 tsp chilli seeds
  • vegetable stock
  • olive oil
  • salt & pepper

Method:

  1. Peel & dice your onion & garlic cloves
  2. Heat olive oil on a medium-high heat, add onion for the first phase to soften (approx 3 mins), then add garlic & chilli seeds –> cook for a further 2 mins
  3. Add your tinned tomatoes into the saucepan, then bring to the boil
  4. Add vegetable stock, then reduce heat to a simmer & cook with the lid on to create that rich, tomato taste (approx 15 mins)
  5. Finely cut the thai basil & add to your soup
  6. Turn off the heat completely & leave to cool off slightly
  7. Blend mixture by using either a hand-held or free-standing blender until silky smooth, then season to taste
